Palitaw is a Pinoy kakanin (rice cake) variety made of glutinous rice. It is prepared by making a dough out of ground glutinous rice, mold it into a ball-like shape and then flattening it. It is then cooked in a boiling water. When these flattened doughs start to rise or float in the water, it means the dough is cooked already. This floating thingy is why this kakanin is called "palitaw". Palitaw is a Filipino word that came from the root word litaw  which means rising or emerging or becoming visible. Below is a palitaw recipe that uses santan (coco jam) instead of the usual grated coconut with sugar and sesame seeds. But if you like traditional palitaw, just use a mixture of grated coconut, sugar and roasted sesame seeds instead. Roll over or cover palitaw with the grated coconut mixture and you'll have the traditional palitaw already.
 
Ingredients

1 cup galapong (glutinous rice flour)
1/2 cup water
1 cup coconut milk
1 cup brown sugar, I used coco sugar
sesame seeds
salt


How to make palitaw
 
1. Place the glutinous rice flour in a bowl, add water and mix until a dough is formed.

2. Scoop about a spoonful of the dough and mold it like a ball then flatten it. Place the flatten dough in a plate or pan dusted with flour. Set aside for a while.

3. In a pot, add water (around half of the pot), let it boil and then put in the flattened dough. When the flattened dough floats (around 2 minutes), it's done and cooked already. Remove from fire.

4. While cooking the dough, roast sesame seeds in a pan then set aside.
 
How to make santan (coco jam)
 
5. In another pot, add the coconut milk and brown sugar and small pinch of salt. Let it simmer on low heat stirring continuously so it won't get scorched. Remove from fire when you get your desired consistency. You can do this ahead of time. Santan (coco jam) can be used on sandwiches, too.

6. In a serving plate, place the cooked palitaw and then pour over the santan. Sprinkle with roasted sesame seeds.
