Spinach is rich in vitamins and minerals like vitamins A, B, C and K, iron and calcium, among others. Aside from these vitamins and minerals, it's also a great source of fiber. And these are the reasons why I love spinach. Recently, I read an article that says to retain much of these nutrients, spinach should be cooked using a quick method like sautéing and blanching. Recently, I became fond of blanching vegetables because it brightens vegetable color (more IG-friendly 😜) and minimizes loss of vitamins. I usually sauté spinach but this time around, I just blanched it. Here's how I did it, a no-sauté garlic spinach.

Ingredients

1 bunch spinach, cleaned and remove from stem
3 cloves garlic, minced
2 tbsp olive oil
soy sauce, to taste
ground pepper, to taste
roasted sesame seeds

How to make a no-sauté garlic spinach

1. Boil water in a pot. When boiling, put off the fire then drop the spinach and let it sit for about 30 seconds (up to 1 minute, if with big stems). Then remove the spinach from the pot and put it in a colander and put through running water for a few seconds. Afterwards, squeeze excess water and put in a bowl.

2. Heat the olive oil in a pan and add the minced garlic (for a few seconds, just enough to heat the garlic) then pour over the bowl of spinach.  Add in soy sauce, ground pepper and sesame seeds. Mix well.

Note: heating olive oil and minced garlic is not necessary but I like to somehow tone down the sharpness of the garlic, that's why. If you're okay with raw garlic, then just mix all the ingredients in a bowl.

That's it, healthy garlic spinach is ready for serving. Serve as a side dish for any meal. Enjoy!
