Jamaican steamed fish ala PFD

I'm a follower of Migrationology (Mark Weins) on IG and I love all his food adventures. He's a vlogger who travels for food. One of his recent posts is his food adventures in Jamaica and one of the featured dish is Jamaican steamed fish. Jamaican steamed fish is different from steamed fish we know where we let the fish cooked via steam. Jamaican steamed fish is cooked more like by boiling it with various veggies and herbs in it. Since it's a fish and veggie dish, I immediately got interested and decided to make my own version of it.

This recipe is just an inspired version of Jamaican steamed fish as I couldn't find most of the ingredients here in the Philippines. Instead of thyme, I used tarragon and for pimento, I substituted bell pepper. I still love the outcome of my Jamaican steamed fish ala PFD so here's the recipe.

Ingredients

1 yellow-tail snapper, around 400g; you may use any white fish, too
1 medium carrot, sliced
1/4 squash, around 300g
5 okra, cut into 3 slices
1 bell pepper, sliced
1 finger chili, sliced
1 onion, sliced
3 cloves garlic, minced
1 thumb-size ginger, crushed or sliced
2 tarragon twigs
1 tsp curry powder, just felt like adding this one 😄
achuete or annatto powder, dissolved in water, for coloring
salt and pepper, to taste
2 cups water

How to cook Jamaican steamed fish ala PFD

1. Clean, salt the fish then set aside.

2. In a pan, sauté garlic, onion and ginger. After about a minute or until after the onion softens, add in all the veggies (carrot, squash, okra, bell pepper, finger chili) and stir fry for about 3 minutes. Add the seasonings and herbs (curry powder, dissolved achuete/annatto powder, tarragon twigs, salt and pepper) and stir some more.

3. Pour the water and let it boil for about 3 minutes. Once boiling, add the fish and let it simmer until the fish is done. Mash some of the squash to make the broth a bit thicker.

That's it, you have your Jamaican steamed fish ala PFD ready for serving. Best served with warm rice. Enjoy!
