Ilocos' Poque-Poque

I've heard/read/saw about this somewhat odd-named Ilocano dish several times before. From Ilocano friends to travel bloggers to television shows, travel and food trips to Ilocos usually includes trying out and having a taste of poque-poque. Poque-poque is an Ilocano eggplant dish with garlic, onion, tomatoes and scrambled eggs sauteed in butter. At least that's how this poque-poque of La Preciosa in Laoag tasted. It's sort of like eggplant omelet of the Tagalogs, but this one is somewhat watery. It's good but I still prefer Tagalog's eggplant omelet, especially when cooked with ground pork...yum! Still, try poque-poque when you visit Ilocos, you might like it better than I do. ;)
