I chanced upon these tiny shrimps when I'm doing my grocery-thing at Landmark. It's been a while since I prepared/ate tortang alamang so I decided to buy some and make an omelet out of it. Here's the recipe...

Ingredients:

200 grams alamang (tiny shrimps)
3 medium-sized eggs, beaten
1 tsp minced garlic
1 medium-sized red onion, minced
1 tsp parmesan cheese
1 tsp ginger, minced
4 tbsp oil
salt
ground pepper

Procedure:

1. Saute the garlic, onion and ginger.
2. Add the alamang, salt and pepper to taste and saute for about 5 minutes. Set aside and let it cool a little.
3. Put the mixture in a bowl, add the parmesan cheese (grated) and the beaten eggs then mix well.
4. In another pan, heat the remaining oil. Put in a 3 tbsp of the alamang mixture, flatten it and let it fry until golden brown. Turn the other side and continue frying.

Best served with vinegar dip (vinegar, minced garlic and onion, soy sauce, ground pepper mixture), warm rice and a veggie dish. Enjoy! ^_^

PS: Wondering why I put parmesan cheese on this recipe? Well, I saw parmesan cheese leftovers which is soon to expire so instead of wasting it, I decided to add it on this recipe. I didn't notice anything remarkably different on the taste, though. Maybe because I didn't add enough to affect the taste? I don't know! Hehe... :D
