Ginataang halo-halo is a Filipino snack favorite composed of sweetened tubers and fruits cooked in coconut milk. Sweet potato, taro, cassava, banana together with sticky rice balls and tapioca pearls are the common ingredients of ginataang halo-halo. It is usually served as a snack or dessert but of course, this can be enjoyed anytime of the day. Ginataang halo-halo is one of the snacks that I prepared and cooked during the pandemic. Below is the recipe.

Ingredients

2 saba, sliced
2 medium purple sweet potato, cut into bite-size
1 medium taro, cut into bite-size
1 cup glutinous balls
3 cups coconut milk
1/2 cup brown sugar, adjust according to your preference
pinch of salt
1 star anise

How to make ginataang halo-halo

1. Pour two and a half (2 1/2) cup of coconut milk in a pot and let it simmer.
2. Add sweet potato and taro roots and let it cook for about 5-8 minutes.
3. Add bananas, glutinous balls, star anise, sugar and salt. Cover and let simmer  for about 5 minutes or until the ingredients were cooked. Stir occasionally. 
4. Add the remaining half cup of coconut milk then turn of the stove.

That's it, ginataang halo-halo is ready for the taking. Serve hot, or cold, depending on your preference. Share and enjoy!

Note:
 
You may add other tubers like cassava and purple yam as well as tapioca pearls and jack fruit. In my case, it's a limited ingredients because these were the only available ones in the grocery.
