We Filipinos love pancit canton for snack. Some others even have it as their main meal, others serve it as main viand. It's because pancit canton is affordable and so easy and quick to prepare. You'll have your pancit canton ready in just 3 minutes. But we all know that instant pancit canton is not that good for our body, especially if we consume it frequently. In our current situation where there is a health crisis due to covid-19, we need to make our body stronger and healthier. To make this possible, we need to try to follow the food pyramid in our daily meals, which means to always include fruits and veggies. Actually, it should be more fruits and veggies since they are at the bottom of the pyramid. But because everything is costly nowadays, always having fruits and veggies on our meals is good enough, in my opinion.

From time to time, I also gave in to my not-so-healthy cravings, too. I just make sure it's in moderation. Last week, I crave for pancit canton. To make it healthier, I added fresh veggies in it. It extends the preparation time but it's for a healthier body so it’s all worth it. Here's the recipe.

Ingredients

1 pack lucky me pancit canton or any instant pancit canton you have
1 small carrot, sliced
1/4 cabbage, sliced
1 celery stalk, cut into 1 cm thick
a handful of spinach (you may use kangkong, too)

How to make a healthy-ish instant pancit canton

1. Boil water in a pot and cook the pancit canton noodles per package instructions.

2. One minute before the required cooking time, add carrots and celery, mix and then remove excess water.

3. Add seasoning, cabbage and spinach and mix well.

That's it, healthy-ish instant pancit canton is ready for serving. Best served with cold and freshly-made citrusy drink. Enjoy!
