Bukayo ng Laiya

Bukayo or candied coconut strips is a traditional Filipino dessert. It is made of grated/shredded young coconuts with brown sugar (some used muscovado for a better taste) and some flavorings like vanilla or langka strips. The ones in the photo above used peanuts, though, and was packed in dried banana leaf stalks (the trunk-like part of the banana). All-organic eh. ;) By the way, the bukayos in the photo were bought from Laiya, San Juan, Batangas, when we had our short weekend getaway there. Try it, when you happen to be in the area. ^_^
